A Guide to Bake the Perfect Pizza in Your Hajka Pizza Oven

This guide shows you how to make a perfect Italian‑style pizza* with your Hajka.
Hajka isn’t just for gratins, buns, and other tasty dishes — it’s also a pizza oven. The same product gives you pizzas with a crispy bottom and a perfectly baked top.
So you don’t need two products — Hajka does it all!
Pizza is baked from the bottom up
The reason pizza turns out so well in Hajka is the carbon steel pizza plate, which has a unique ability to conduct and retain heat. Just like in an Italian pizza oven, the pizza is baked from the bottom up. Some pizza ovens do have a baking plate made of stainless steel, which performs poorly, as both heat distribution and heat retention are much weaker.
Step by step
1. Make the pizza dough and the tomato sauce
2. Prepare the toppings
3. Preheat your Hajka
4. Cut the baking paper to size
5. Flatten the dough and place it on baking paper and a cutting board
6. Add the toppings — not too much
7. Move the pizza to the baking tray
8. Bake for about 8 minutes

The pizza dough
The dough is the foundation of a pizza, and the best option is either to make your own dough — you will find a good recipe here — or the second-best option is to buy ready-made sourdough. The pizza kits available do not give the same results as the ones shown in the pictures here.

Take your time to cook the perfect pizza sauce.

Preheat your Hajka
Since the pizza SHOULD be baked from the bottom, you need to preheat your Hajka to medium power for 10 minutes. If you do not preheat your Hajka, the pizza steel will cool down too quickly.
For perfect results — Raisors
To get a nice colour on the cheese, it is smart to use Hajka Raisors — these lift the tray so you get more top heat and more controlled bottom heat.
BAKE
Use baking paper
The baking paper makes it easy to place your pizza on the baking steel and prevents the base from getting too much colour. It also keeps your spatula/pizza peel clean. Cut out a circle with a diameter of 18 cm / 7 inches.
Flatten the dough
80-90 grams of dough is a good amount for one pizza in Hajka. Flatten the dough on the baking paper.

Add the toppings
Spread one tablespoon of tomato sauce. Then add ham or other toppings. Finally, add four tablespoons of grated cheese. If you add too much topping, the pizza will become heavy and will not rise as well. To get raised edges, try to avoid tomato sauce and topping on the edges.
Bake
Place the pizza on the hot tray with the baking paper and bake for about 8 minutes until the bottom and topping are golden brown.
