Oven-Baked Cod Loin with Butter and Lemon (video)
Fish is a fantastic ingredient, but it can become dry when you pan-fry it. The trick is to sear it quickly, so it gets a little colour, then place it in your oven. That gives you the most tender fish you can imagine! Here I use cod loin, but the same concept—sear first, then bake in the oven—works for all types of fish.

Ingredients
- 300 grams cod loin (thawed)
- Salt
- Butter
- 200 g broccoli
Directions
- Heat the butter in the pan until it turns slightly brown.
- Add the fish and sear for 30 seconds on each side.
- Move the pan into your camping oven and bake the fish on medium heat for ten minutes.
- Serve with melted butter and freshly squeezed lemon juice.
